Afternoon snack, ultimate party food, or friend of taco - we'll take this Stanky Guacamole any way it presents itself!
1 quarter of a red onion, thinly sliced then diced
2 cloves garlic, crushed/minced
Handful chopped coriander (optional, for those of you weirdos who don't like coriander)
3-4 limes for juicing
1 jalapeno, if not in season then green chilli is good too
1/2 tsp of Stank Sauce, preferably Extra Hot! (can put up to 1 tsp without it being too overpowering)
Salt to taste
Prep all your ingredients - slice, dice etc.
Throw everything, except the Stank and coriander, into a bowl and mush. Some people like it chunky, others smooth - it's up to you and it's all good!
Stir through the Stank and coriander once you're happy with the consistency of your guac.
TIP ! If you salt the garlic as you mince/dice, and grind the salt against the garlic with the edge of your knife as you go, you'll end up with what will almost be a garlic paste. 10 bonus points for guac consistency!
