What do you do when you've had a hectic day at work, too low on energy to bother with a full-on cook up for dinner, and shouldn't be spending any more of last week's pay check on takeaway? DO THE ALMOST-NANDO'S CHICKEN!

An accidental creation courtesy of my genius fella, Harry, the Almost-Nando's Chicken is so quick to do and requires almost no cooking (throwing on the BBQ and leaving until charred is as close as it gets, really right?)


1 - 2 kg chicken thighs

5-6 cloves of garlic

2 tbsp ginger, either finely grated or sliced thinly

1 tbsp Stank Sauce (we usually use Extra Hot, but start with less and adjust to your taste!)

Zest and juice of 2 lemons and 1 lime (or 3 lemons, to be less fussy)

Glug of olive oil, for a little bit of viscosity

Salt and black pepper to season thighs

Make the Magic Happen

Season the thighs evenly with salt and pepper

Whizz the other ingredients (garlic, ginger, Stank, lemon and lime juice, zest, olive oil) in a food processor

Marinate the chicken for at least 10 minutes while you're heating up the BBQ

We like cooking the thighs on medium-high heat until they're slightly charred on the outside, but still juicy

Continue to baste while it's on the grill with the reserve marinade

We enjoy it most with a fresh Caesar salad, or any kind of spiced rice (e.g. saffron rice, Asian fried rice, coconut rice and fried shallots, paella-style rice minus the seafood)
